Pizza Burritos Make Me Smile

Sorry for the lack of post yesterday. I was home sick from work and couldn’t muster the energy to write something worth reading.

Good news is I’m feeling much better and much more energetic today.

Since I had been feeling kind of blah for most of the week, I decided to try a dinner that would cheer me up.

Anything pizza-related usually does the trick, so I decided to be creative and make a pizza burrito with some things I had in my fridge.


I started with a whole wheat wrap for the base.


Topped it with some pizza sauce.


And then cheese.


Into the microwave for one minute.


Mmmm melty cheese.


Then I rolled it up into a burrito!

Sometimes I warm up some veggie burger and throw it in the mix too, but I didn’t have any yesterday and I noticed the difference. The burrito definitely wasn’t as filling without the extra veggie burger.

But it was still delicious and did the job of putting me in a good mood, so that definitely counts for something!

I’m so looking forward to the weekend. I have dinner for my aunt’s birthday tonight and then tomorrow my little bro is in town for a lacrosse tournament. At some point I plan on fitting a long run in too. Should be busy, but fun!

  8. Yum, I love impromptu pizzas! I top so much stuff like a pizza just to have PIZZA!!! – english muffins, toast, pitas, tortillas, I've even used Tostitos rounds. Is that crazy? Maybe I love pizza *too* much. :-/

    Finally! It took me over one week to read all your posts dating back to 2006. But I could not just skipped them, I wanted to see how you have progressed (and I love your writing style:))
    Now when I am done, I am sending few words.
    It is really cool that you have decided to take up running and have sticked to it after your first marathon was done.
    I have been running since I was a kid and am still running.
    This might sound little stupid and I really do not want to sound mean about your running times or anything. Reading your blog made me kind of realized that I can run over 8min pace and still feel like a runner. Because you do not run 8min pace and you are a runner! I used to do my easy runs at 7:45-8min pace but I have been injured on and off past year. When I was (and now am again) coming back from injury and did my runs at 8:00-30 pace I was freaking out because it was sooo slow for me and I have not felt like a hard core runner. I would love to get to shape when my easy runs will be at 7:30 pace, but if I don't, I think I will be ok with that. I see that being a runner does not mean that you have to run 2:40 marathon, it is more about attitude and other things, not only times and pace.
    I am going to keep following your blog and see how you are doing (maybe even ask you couple advices about yoga:)).

    Thank you the such a kind comment. I can't believe you took the time to read all of my old posts!

    And don't worry you definitely didn't offend me with the running times stuff. People run at all different paces. I'm definitely not a fast runner, but I don't think speed is what qualifies someone as a runner. I think if you're getting out there every week and pounding the pavement, that makes you a runner.
