BBQ Chicken and Roast Veggies

There’s nothing that says summer more than some BBQ chicken and roasted veggies fresh off the grill. Sure it helps to be eating them on a back porch after playing in the pool, but we can’t have it all.

Heck, I don’t even have a grill, so I had to replicate said summer delight with a stove.

The meal came out delicious, but I missed those char marks from the grill.

I started by marinating the chicken in some BBQ sauce.

I set the chicken aside to focus on the veggies.

And I put the BF to work chopping up zucchini, yellow squash and a red pepper.

After spreading them out on a cookie sheet, we went to town with the seasonings.

We used my mesquite blend again. Some of you asked about it last time and it’s just a McCormick’s blend called Mesquite Grill (or something very close to that.) I really love it.

We also sprinkled the veggies with some pepper and onion powder. And then into the oven they went to roast for about 15 minutes at 400.

While the veggies were roasting, I cooked the chicken tenders on the stove.

Then the veggies came out of the oven.

All together now.

Mmm grapes. They’re one of my favorite summer fruits!

What’s your favorite summer dish?

  1. Mmm. Looks great, Jess! I might have to come to your place for dinner!

My favorite summer dish is anything on the grill… burgers, chicken, kabobs, etc! mmmm

  2. Looks like a great meal. I need to break out our grill and get it going. Good luck on the Cherry Blossom Run this weekend!

  3. That looks awesome! I love roasted veggies year-round, just changing up which veggies go into the oven. It's corn on the cob season soon!

  4. Tasty! Although there's no way to make raw chicken look good on the internets, is there? 🙂

  5. you should look up the Sesame Chicken recipe on recipezaar.com. It's pretty easy and its sooooo good. You'd love it!! FEED ME!!! 🙂

  6. Blueberries!!! Oh how I've missed them this winter. I know you can get them year round, but they're really not as yummy and like 584 times as expensive! Your squash and zuchinni look great!

I am a big fan of lots of fruit in the summer – especially in PA where we have loads of blackberries growing wild. However, I will never turn down a night of good grilling!!

  8. I love anything I can grill. Give me a big fat juicy rare steak!!! Just can't eat it very often. Grilled salmon, grilled chicken, grilled pork tenderloin, grilled asparagus. Yum!

  9. looks delish!!
