Balsamic Pasta and Veggies

Zucchini, summer squash and peppers are pretty much my go-to veggies all summer long. They're so delicious and easy to use in a variety of things, so don't be surprised if you see these veggies popping up in tons of my summer meals.
This week was no exception.
I knew I wanted to do something with pasta, but not just with plain marinara sauce.
So I got a little creative.
I had the BF chop the veggies while I put on some water to make the pasta.
Into the water went the noodles.
And into the frying pan went the veggies. I added a can of artichoke hearts to the mix for some variety. Plus artichoke hearts are delicious and pick up flavor really easily.
I sauteed the veggies in olive oil and balsamic vinegar and sprinkled them with garlic powder and Italian seasoning.
Once the pasta was finished, I drained it, the BF plated it and then we added some veggies to the top.
I sprinkled the food on the plate with a little bit more balsamic and seasoning and then topped with Parmesan cheese.
Quick and simple and delicious!
