BBQ Chicken and Roast Veggies
There's nothing that says summer more than some BBQ chicken and roasted veggies fresh off the grill. Sure it helps to be eating them on a back porch after playing in the pool, but we can't have it all.
Heck, I don't even have a grill, so I had to replicate said summer delight with a stove.
The meal came out delicious, but I missed those char marks from the grill.
I started by marinating the chicken in some BBQ sauce.
I set the chicken aside to focus on the veggies.
And I put the BF to work chopping up zucchini, yellow squash and a red pepper.
After spreading them out on a cookie sheet, we went to town with the seasonings.
We used my mesquite blend again. Some of you asked about it last time and it's just a McCormick's blend called Mesquite Grill (or something very close to that.) I really love it.
We also sprinkled the veggies with some pepper and onion powder. And then into the oven they went to roast for about 15 minutes at 400.
While the veggies were roasting, I cooked the chicken tenders on the stove.
Then the veggies came out of the oven.
All together now.
Mmm grapes. They're one of my favorite summer fruits!
